Cinco de Mayo Tacos—Recipe

Well, it wasn't Mexican independence day...but they did win a battle against the French. And that's reason enough for me to celebrate with tacos and margaritas!!

Taco Meat:
*place all ingredients in crock pot. 2 hours on high, 7 hours on low. shred and drain excess juice. take out guajillos before serving.*
4 lb beef chuck roast
1 jar Pace mild salsa
1 can black beans
1 can corn
2 guajillo peppers (STEMMED & SEEDED)
2 Tbs cumin
1 Tbs cayenne pepper

Half-fry your mini-tortillas (30 sec each side) fill with meat and other toppings...cilanrto, onions, cheese, more salsa, guacamole, etc

Say Hello: take two & Recipe Share

Well... I tried to write a "Hello" blog post waaayyyy back in the fall, but never made it to completion :/ SO, here I am, saying hello with the new spring season instead. Lisa's blog says every Monday: Hello!

Hello, warm sunshine and spring weather.
Hello, birdies chirping outside my window this morning.

Hello new recipes...Here are current faves:

Veagan Quinoa Chile
'Mexican Haystacks'

— Tortillas —

2 cups flour, 1 TEAspoon salt, 1/2 cup melted butter or oil, 1/2 cup water; gently knead/mix til dough comes together. Tear off half-fist sized balls, trying to keep edges smooth. Roll out as thin as you can using flour. Cook in skillet/on griddle approx 10 seconds each side. Enjoy!!

— Strawberry Lemon Ice Cream —

luckily my friends Ethan & Angela have an ice cream maker...heres the ingredients:
Juice of 3 (meyer) lemons + some zest
1 box strawberries, puree 3/4 and leave the other for garnish
1.5 cup whole cream
1.5 cups your choice of milk
Powdered sugar to taste.
Mix together ingredients and pour into ice cream maker
...add sugar while mixing and taste test...
slice strawberries for on top

...and what I will be making tonight:
(a fave Puerto Rican street food).

Flory Wedding — paper goods design

After a few months of waiting...I am proud to present my first complete wedding paper goods design project! Working with Ethan and Angela was so much fun. Aside from them being great friends of mine, they were so dedicated to making each part of their wedding come together as a reflection of their personalities. We had fun working together on the final assembly of some of these pieces, and I also enjoyed their enthusiasm for unconventional do-it-yourself methods in order to make their vision come to light. {now on to those Thank You notes!}
